In Italy, there is a wonderful dish Melanzane alla parmigiana — it’s aubergines baked in tomato sauce with cheese. And I do the same, but with veal chops — it turns out something incredible! Fresh chili is not as vigorous as dry, but I like these red specks.

INGREDIENTS FOR 4 PORTS.

calf chops — 4 pcs.
crushed tomatoes in own juice — 300 g
mozzarella for pizza — 200 g
eggs of chicken — 2 pcs.
granana padano — 100 g
red onion — 1 pc.
garlic — 2 cloves
chili red — ½ pcs.
olive oil — 7 tbsp. l.
homemade bread crumbs — 4 tbsp. l.
flour — 3 tbsp. l.
sugar — 1 tsp.
Oregano Dried — ½ tsp.
black pepper freshly ground — ¼ tsp.
salt of sea — ½ tsp.

Preheat the oven to 200 ° C. Peel onion and garlic and finely chop. Chili pepper finely chop.

Preheat 2 tbsp in a frying pan; spoon olive oil, put onions, chili and garlic, sprinkle oregano, lightly salt, pepper and fry.

Mix the flour with a pinch of salt and pepper. Eggs break into a plate and shake with a fork.

Chops wash, dried, roll in flour, then dipped into an egg and roll on all sides in breadcrumbs.

Heat the remaining olive oil in a separate frying pan and fry the chops on each side for 3-4 minutes.

In a frying pan with onions and garlic, add crushed tomatoes, a little salt and sugar, mix everything and warm it over a small fire.

Cut the mozzarella into slices, grate the padano rubbed on a large grater. Fried chops put in a heat-resistant ceramic mold, pour sauce, top spread mozzarella, sprinkle with all the grated cheese. Bake the meat in a preheated oven for 10 minutes.
