An excellent combination of meat and vegetables — for those who care about their proper nutrition.
If you want to dine or eat something useful and tasty, then this dish is for you. Vegetables and meat — what can be more correct in their combination.

Stewed beef with zucchini and other vegetables can be served as an independent hot. Or complement any garnish. For me, everything is very organic in this version. I do not want to add anything.

Vegetables are cooked quite quickly. You only need to put out the meat until soft. And the cooking time just depends on the quality of the meat. But there is nothing complicated. Fried, filled with water. While meat is being prepared, you can make a lot of useful things. Best for this dish is suitable for young zucchini. In this case, you do not need to clean them.

Ingredients:

Beef — 400 g
Squash — 3 pcs. (young)
Carrots — 1 pc.
Onion — 1-2 pcs.
Bulgarian pepper — 2 pcs.
Tomatoes — 2-3 pcs.
Vegetable oil — 2 tbsp.
Garlic — 2 cloves
Salt — to taste

Step-by-step recipe:

Beef wash and cut into convenient pieces.
In clean zucchini cut the tips on both sides and cut the vegetables in half, and then — slices.

Prepare onions, bell peppers and carrots. Of course, you can not add carrots and peppers, but with them the dish looks more elegant, fragrant and tasty.

Tomatoes can be grated, and you can cut them into pieces, if you are not very annoyed by its peel.

In a cauldron or non-stick cookware, warm up the vegetable oil well and fry the beef so that it seizes on top and the juices stay inside. Then season with salt.

Add in a pan a half cup of water and cook under the lid until the meat is soft. No matter what cup you take, excess water can always be evaporated by holding the meat in the open on fire. If the water evaporates earlier, and the meat stays tough, pour in some more water.

When the water remains very little, add the onion and, stirring, keep on the fire for another 5 minutes.

Add carrot and pepper, salt. Put out for 5-7 minutes.

Add zucchini, stir the contents of the pan, make the fire minimal and put it out for 10 minutes. You can cover with a lid, so that the marrows give their juice.

Pour the mashed tomatoes and add chopped garlic, mix. Keep on fire for 5 more minutes.

Stewed beef with zucchini is ready, check the dish for salt. It remains only to sprinkle with herbs.
