Chocolate sweets with salted caramel

On 80 items:
185 ml. Cream 35% 1 vanilla pod 375 gr. Powdered sugar 60 gr. Liquid glucose 500 gr. Chocolate (tempered) 300 gr. Unsalted butter 1 tbsp. Salt

1.Skin seeds from a vanilla pod. Seeds and a pod, salt in a cream. Bring to a boil and immediately remove from heat.
2. Heat the empty pan, when it becomes hot add sugar powder and liquid glucose. Brew to a caramel amber.
3. Slowly and with constant stirring, pour the cream into caramel. Stir well and remove from heat.
4.Cube for a cube add butter. Stir well until smooth, then cool.
5.Forms fill with chocolate. Let it freeze. Fill the filling. Top of the layer of chocolate. Let it freeze. Take it out of the form. Bon Appetit!

Mint chocolate

Per serving:

Cream 35% 50 gr.
Milk 100 gr.
Chocolate 50-60 gr.
Mint a few twigs
Orange peel 1-2 strips
Whip the cream with mint and half a peel.

Milk is brought to a boil, add the chocolate, mix thoroughly until the chocolate dissolves completely. We pour hot chocolate into a cup, spread mint cream and sprinkle with the remaining orange peel.
The drink is ready.
