Chocolate sweets

Chocolate sweets with orange juice and balsamic vinegar.

90 ml. Cream 35%
1/4 vanilla pod
250 ml. Orange juice
12 ml. Balsamic vinegar
300 gr. Powdered sugar
40 gr. Liquid glucose
500 gr. Chocolate (tempered)
200 gr. Unsalted butter

1.Skin seeds from a vanilla pod.
Seeds and pod, dip into orange juice.
Boil the juice to half the volume. Add the cream.
Bring to a boil and remove from heat.
2. Heat the empty pan, when it becomes hot add sugar powder and liquid glucose.
Brew to a caramel amber.
3. Slowly and with constant stirring pour cream with orange juice into caramel.
Stir well and remove from heat.
4.Cube for a cube add butter.
Stir well until smooth, then cool.
5. Add the balsamic vinegar and mix well again.
6.Forms fill with chocolate.
Let it freeze. Fill the filling. Top of the layer of chocolate.
Let it freeze. Take it out of the form. Bon Appetit!
