English muffin «christmas cake»

English cake is baked 1.5 months before the holiday. During this time, he must be infused with strong alcohol. Usually it is impregnated with rum, whiskey or cognac, which gives it a sweetish, spicy taste and enhances the aroma of spices. Traditional spices are cinnamon, cloves and nutmeg. Every day the smell of spices becomes stronger and reminds of the approach of the holiday.

The finished cake is decorated with marzipan and white icing and stored in foil. Or simply sprinkle abundantly with powdered sugar.

We need:

Flour — 250 gr
Butter — 100 gr + 2 tsp to lubricate the mold
Milk — 150 ml
Egg yolks — 3 pieces
Sugar — 150 gr
Vanilla sachet
Salt — a pinch
Baking powder — 1 tsp.
Cognac, rum or brandy — 70 — 100 ml
Raisin dark and white — 100 gr
Dried apricots — 50 gr
Figs — 50 gr
Candied fruits — 100 gr
Ground cinnamon — 1 pinch
Clove ground — 1 pinch
Cardamom powder — 1 pinch
Nutmeg — 1 pinch
Orange — 1 pinch
Powdered sugar — for sprinkling

Preparation:

1. Dry fruits thoroughly rinse and dry. Dried apricots and apricots in small pieces, combine with raisins and pour all with alcohol. I used cognac.
Mix and sustain the dried fruits in the ridge during the day, or at least the night.

2. Clean the orange thoroughly with a brush in hot water, thoroughly dry and grate the zest on a fine grater.

4. Prepare the dough. Butter must be melt and beaten with sugar until uniform.

5. Separate yolks from proteins. Proteins in this recipe we do not need. Yolks one by one to put in a mixture of sugar and butter.

6. Sift flour and add in dough in small portions with milk.

7. While continuing to beat, add baking powder, salt, vanillin, orange peel and all spices. To stir thoroughly.

8. Drain the liquid from the dried fruits and put them into the dough. Do not pour out the liquid, we still need it. Add candied fruits. Mix the dough thoroughly again.

9. Put the dough in a prepared baking dish. The form can be different.

10. Preheat the oven to 180 degrees and place the pan on the pan on the middle level. Bake for 40-50 minutes, depending on the oven.

The finished cupcake should blush and when punctured with a toothpick, there should not be any liquid dough on it.

11. Take the muffin from the oven and grease it with butter and pour off the dried fruit from the dried fruits. Let cool a bit, get it, put it on a dish and sprinkle it with sugar powder, using a sieve. This is if you eat it on the same day.

And if you insist it before the holiday, then bake the cake 2 weeks before it. Ready-made hot cake should be drizzled with alcohol and allowed to cool. Then wrap in baking paper, and then in foil and store in a cool place 2 weeks before the holiday, periodically impregnating it with alcohol!
