Beef tartar

600 g chilled beef fillet
4 Pickled Cucumbers
10 pickled capers
4 anchovy fillets
1 clove of garlic
1 small onion
1 tbsp. L. Sweet mustard
3 yolks
80 ml of olive oil
1 lemon
1 sprig of parsley
2 feathers of green onions
Salt, pepper, ground paprika
12 slices of bread for toast
1. Beef cleanse of veins and fat.
Pass it through a meat grinder (or cut into small cubes), salt, pepper.
2. Grind garlic, onions, capers, pickled cucumbers and anchovies.
3. Stirring, add to the stuffing in turn all the crushed ingredients, then add mustard, yolks, a pinch of paprika, lemon
Juice, parsley and feathers onions.
Pour in the olive oil.
All mix and serve to the table with croutons from bread.

Advice
For sharpness in tartar, you can also add a few drops of Tabasco sauce.
Also, you can make a 3 eggs out of 3 eggs, from which you will then extract the liquid yolk for tartar.

Beef patties with paprika and sauce from balsamic vinegar

400 g of beef
1 red sweet pepper
1 sprig of parsley
2 cloves of garlic
Pinch of ground paprika
60 g of butter
2 protein
olive oil
Salt, pepper, flour

For sauce:
5 tbsp. L. Mayonnaise
30 ml of balsamic vinegar
0.5 shallots onions
1 sprig of thyme
olive oil
salt pepper

1. Beef should be cleaned of veins and fat, cut into cubes.
Turn through the meat grinder meat, parsley, sweet pepper and garlic.
Season with paprika, salt, pepper.
Add the proteins and mix thoroughly.
2. To mold out small round cutlets.
Slightly roll them in flour and fry in olive oil mixed with creamy.
3. Prepare the sauce. Beat up balsamic vinegar and 2 tbsp. L. Olive oil, season with salt and pepper.
Add mayonnaise, thyme and chopped shallots.
Stir and serve to cutlets.

Tip
As a side dish to cutlets fried potatoes and potatoes in a uniform or shallots, baked in an oven in salt (moisten a little salt with water to adhere) are well suited. Cook for 20 minutes at 160 ° C.
