Tomatoes — 2.5 kg
Sugar — 0,5 cups
Black pepper — 20 peas
Carnation — 2 pcs.
Coriander — 10 peas
Vinegar 9% — 2 tbsp. L.
Salt without additives — 0.5 tbsp. L.
Basil, parsley, fennel to taste

Cooking method

Ripe tomatoes rinse and cut out the stems.
Cut them into small pieces, put them in a container and cook them over medium heat for 20 minutes.
Then, this mixture is wipe through a sieve or grind with a blender.
The resulting tomato mass bring to a boil and evaporate over low heat (1.5-2 hours) until it thickens.
Then add salt, vinegar, sugar, as well as greens, peppers, cloves and other ingredients. Cook another 10 minutes.
Strain the resulting ketchup.

You can serve immediately after cooling. It can also be poured into sterilized jars, sealed for long-term storage.
