A very tasty and quick snack from eggplant and zucchini will please you: beautiful, appetizing and incredibly tender. Vegetable pancakes in combination with a flavored sour cream sauce is a real delicacy from which it is impossible to tear yourself away.

For their preparation, only a few products and a minimum of time will be required, and the result: always stunning. As a rule, pancakes are made either from zucchini or from eggplant, but at once two vegetables in one snack are much tastier and more interesting. By the way, you can serve them with any other sauce: for your taste.
Necessary ingredients:
• 180 grams of aubergines;
• 180 grams of courgettes;
• 80 grams of brynza;
• one raw chicken egg;
• two tablespoons of wheat flour;
• salt and black ground pepper — to taste.
For sauce:
• three tablespoons of sour cream;
• one tablespoon of mayonnaise;
• one clove of garlic;
• greens of parsley and dill;
• Spices.

Quick appetizer from eggplants and zucchini: detailed recipe

1. Vegetables and aubergines washed, cut off the tail.

2. Eggplant cook until ready (about 10 minutes) in boiling water or bake in the oven.

3. Squash we rub (along with peel) on a large grater, put it in a bowl, salt and leave for a few minutes to let the juice.

4. When the eggplants cool a little, cut them into small cubes, put them into a bowl.

5. Add them zucchini, from which you need to drain the liquid.

6. Brynza mash with a fork and add to vegetables.

7. There also drive one chicken egg, salt and pepper to taste, pour the wheat flour and knead the dough.

8. Put a frying pan on the stove, pour a little vegetable oil (I have a fragrant home-made oil) and warm it up.

9. Spoon the dough, fry the vegetable fritters on both sides, on medium heat, until golden brown.

10. Finished pancakes spread on a plate, laid with paper towels.

11. Delam sauce: in a small bowl combine sour cream.

12. We add to them a clove of garlic passed through the press, finely chopped greens of dill and parsley. Solim and pepper to taste, stir.
