Tartlets with red fish
For the test, we will need butter 100 grams, three tablespoons of sour cream or thick yogurt, two glasses of flour and a little salt.
We sift the flour, then it must be chopped with a knife with a little bit of frozen butter to a fine crumb. Add sour cream, salt and quickly knead the dough. If the dough turns out cool add more sour cream. The dough should be soft, elastic, but long to mix it is not necessary. In dough I always add a little bit of sugar. The dough is collected in a bowl and wrapped in a food film, we put it in the refrigerator.
We hold there for 40-50 minutes, then we take out and divide into small pieces. We take molds for muffins and we put in them dough, tightly pressing to the bottom and sides. Preferably it is better to lubricate the molds with oil. We warm the oven and bake the tartlets to a golden color at a temperature of 180 degrees. While they are cooling we make a stuffing.
How to prepare a stuffing. For the filling you need slightly salted red fish 200 grams, 100 grams of Philadelphia type cheese, a slice of garlic, one tablespoon of lemon juice, spices to taste and fresh cucumber, boiled shrimp for decoration. (You can manage without shrimp).
Red fish with garlic crushed to a homogeneous mass, add lemon juice, chopped cheese, favorite spices and beat well. We put the mousse in a confectioner’s bag with a figured nozzle and fill our cooked tartlets. Tartlets can be purchased if they are ready to be cooked. Decorate with boiled shrimp and a thin slice of cucumber. You can decorate with red caviar and greens.
