Salmon with citrus salad

Simple and delicious salad recipes with photos

We will need these ingredients:
• 1 red onion, cut into thin half-rings
• ½ fennel beam, tear the leaves, stems, save
• 1 lemon (clean, disassemble into slices, remove the film) + 1 strip of peel
• 2 oranges (peeled, disassemble into slices, remove the film) + 1 strip of peel
• 750g salmon fillets one piece or two, without bones and skin
• 1 bunch young radish (can substitute 2-3 celery stalks), finely chopped
• 2 tablespoons extra virgin olive oil
• Home-made mayonnaise, supply

Cooking method:
1 Pour into a deep frying pan water so that it did not reach the top about 3 cm. Add ¼ onion, fennel stalks and peel. Boil. Reduce the heat and place in a pan fish — the water should completely cover it. Cook fillets for 8-10 minutes on very low heat.

2 In a large bowl, mix citrus slices, remaining onions, radishes and dill with olive oil. Season to taste and arrange on plates to serve.

3 Get the fish from the pan, cut into portions. Put the salmon slices over the salad and gently pour mayonnaise (or submit it on the table in a gravy boat).

About the dish:
To this dish is ideal for classic Hollandaise sauce. In a water bath in a bowl, melt 30 g butter and stir in two yolks; Knead until then, until the sauce begins to thicken. Remove from heat, add salt to taste and lemon juice. Also, if desired, you can add the sauce of Dijon mustard. Bon Appetit!
