Souffle with salmon and watercress

We will need these ingredients:
• 50 g butter + for greasing
• 3 tbsp. l. grated on a fine grater fresh parmesan + padding molds
• 50 g flour
• 300 ml of milk
• 4 eggs (yolks separated from the whites) + 1 protein
• 175 g smoked salmon (cut into slices)
• 1 bunch of cress (coarse stems removed, leaves finely chopped)
• 2 tbsp. l. lemon juice
• salt
• black pepper

Utensil:
• 4 baking tins of 300 ml each

Cooking method:
1 Preheat the oven to 200 ° C. Put in a baking oven for heating. Grease molds with butter, sprinkle with Parmesan and rotate lightly tapping on the sides to distribute cheese evenly. Put in the fridge to cool. Heat the oil in a skillet, sprinkle with flour and sauté for 2 minutes, stirring constantly. Pour in the milk and allow to boil while continuing to stir. The sauce is a thick and uniform.
