And this recipe from the Caucasus. I also used to cook caviar with a spark!

On 2 kg of cleaned zucchini my leaves:
2 kg of sweet tomatoes
1 kg of sweet pepper
10 pieces of chili peppers
Coriander, tarragon, basil — on a good beam
Two tablespoons ready sharp adzhiki.

I’m cooking in the cauldron.

Vegetables I clean and cut. Tomatoes blanch in boiling water for 3 minutes, take off the skins, cut into cubes.
Peppers are baking in the oven for 15 minutes. I also take off my skin, cleanse the seeds, grind them.

In the cauldron I pour a liter of vegetable oil, lay all the vegetables at once and leave to stew on a small fire under the lid for 2 hours.
Then finely chop the greens and chili, add together with adzhika in the game, salt.

I keep on fire for another half hour and sterilize the jars with lids. I pour hot caviar on the banks, put them in the microwave for 2 minutes, then close.

The recipe for delicious caviar from zucchini in a slow cooker.

We will cook such caviar in a slow cooker using sweet pepper. Its combination with the main ingredients gives an unsurpassed taste and aroma. And such a preparation is being prepared very quickly.

Ingredients:

5 medium zucchini;
1 onion;
5 small carrots;
4 sweet peppers without seeds and ponytails;
2 lavrushki;
5 tomatoes;
4 tablespoons of vegetable oil;
3 tablespoons of vinegar;
4 peas of pepper;
a little dill (at your discretion);
2 tablespoons of salt.

1. Onion cut into half rings or small pieces. Chop the carrots with medium pieces. Send these two ingredients into a multivariator bowl with oil. Set the mode «Frying» for 15 minutes.

2. Without losing time while preparing vegetables, you need to cut the zucchini into cubes. As soon as the equipment signals the completion of work, add zucchini to the bowl and mix. Add about 1 cup of water and cover. Set Extinguishing again for 1 hour.

3. Making zucchini takes about half an hour. Just after 30 minutes, add the peppers, cut into strips, and salt in the cooking.

4. Make tomato puree from tomato using a blender or meat grinder. As soon as the slow cooker signals you the readiness of the dish, the vegetable caviar should also be chopped with a blender. Now it is necessary to combine these two masses — tomato and vegetable.

5. Set the mashed potatoes on the stove and cook for 15-20 minutes after boiling. Be careful, such a mass is very active and can be burned! You can boil it in a slow cooker in the «Cooking» mode for the same time. A couple of minutes before cooking, add vinegar, finely chopped dill, parsley and peppercorns.

6. Put the mass in jars and roll them up. Immediately turn over to warm cloth and cover for the night.

Store snacks in a cold place. After opening keep in the refrigerator.
