Stuffed squid. Very hearty and tasty dish for lovers of seafood, which is especially important during the winter holidays.

Stuffed squid.

NEED:

Kalmar — 2 carcass;
Rice — 1/2 Art.;
Onions — 1 pc.;
Garlic — 1 clove;
Black olives, pitted — 6 pcs.;
1/2 pod red sweet pepper;
1/2 table. tablespoons breadcrumbs;
5 mushrooms;
2 table. tablespoons chopped parsley;
ground white pepper;
vegetable oil;
Dry white wine — 50 ml;

PREPARATION:

Well wash the squid carcasses. At 2 minutes lower the carcass in boiling salted water. Further, their drain. Pour cold water. Now they should be cleaned.

Peel and chop the onion and garlic. Wash mushrooms. Clean thoroughly. Cut in small pieces. Finely chop the flesh of sweet pepper. Sauté vegetables with mushrooms in butter until cooked vegetable.

Rinse the rice. Cook for 25 minutes. For 10 minutes before end of cooking to rice add chopped parsley, mushrooms and roasted vegetables.

Season with salt. Spice up. Pour in the white wine. Simmer all together for another 5-7 minutes. Olives cut into small pieces. Together with crackers Add rice mass. Mix everything.

Now it’s time prepared mixture to stuff the squid. Fry in vegetable oil on all sides. The color should be golden.
