Cooking method:

Mine tomatoes, remove the core, we make a cross on each incision, we immerse them in boiling water for about 2 minutes, until the peel begins to exfoliate. Put the tomatoes in cold water with ice. Easily peel.
Cut tomatoes into quarters, remove excess juice and seeds with a spoon.
Transfer tomatoes into a bowl, sprinkle with olive oil, add sugar, salt, mix. We marin for about an hour.
We crush cloves of garlic and cut them into several parts.
We put tomatoes on a baking sheet covered with baking paper. We put garlic and rosemary on top.
We cook at a temperature of 180 degrees for about 20 minutes (depending on the size and juiciness of tomatoes).
Reduce the temperature to 90 degrees (you can open a little oven) and leave the tomatoes for two or three hours. During this time, turn over the tomatoes at least three times. The less time you dry the tomatoes, the softer they remain. If you need the most dry tomatoes, dry for about 4 hours.
