How to cook soup «Harcho»


The soup «Harcho» is the pearl of Georgian cuisine. Perhaps, almost everyone tried this dish. It is very popular in Moscow restaurants, not only Georgian ones. We offer you one of the recipes for the preparation of this soup.

Ingredients:

Lamb chops — 380 g
Broth of mutton — 600 g
Round-grain rice — 25 g
Onion — 100 g
Tomato paste — 60 g
Tkemali — 30 g
Garlic — 2 cloves
Chili pepper — 1 pc.
Cilantro 15 g
Hops-Suneli — 2 g
Bulgarian pepper — 5 g
Sunflower oil — 30 ml
Pepper — to taste

How delicious and quick to cook soup «Harcho»:

Cut the meat in a bone, put it in a saucepan, fill with broth, bring to a boil and cook over low heat, removing the foam, within 20 minutes.

Peel, chop the onion finely, pepper abundantly; Crush, peel and finely chop the garlic, chop the cilantro finely, remove the seeds of the Bulgarian pepper and cut it finely, cut the chili along along, peel off the seeds and chop finely; Rinse and soak rice with cold water.

Add the onion and rice to the saucepan with meat, season with salt and simmer for another 15 minutes.

Preheat in a frying pan 4 tbsp. L. Sunflower oil, fry the Bulgarian pepper on high heat for 1 minute, add the tomato paste and cook over medium heat for 2 more minutes.

Punch in the blender tomato paste with bell pepper, garlic, half chopped chili pepper and coriander.
Add to the soup punch in the blender mass, tkemali, hops-suneli, and cook for 3 more minutes.

Put the meat in a bowl, pour out the soup and serve.
