We need the following ingredients:

  • 250 ml of milk,
  • 250 ml of creamy cream,
  • 5 egg yolks,
  • 0.5 cups of small sugar,
  • 10 grams of vanilla sugar.

Method of preparation, how to prepare:

Boil the milk and cool until warm.

Stir the yolks with sugar, vanilla sugar. Beat with a fork or blender. You can adjust the amount of sugar to your liking. Without stopping stirring, pour a thin stream into the yolk mass of milk. Not hot, otherwise the yolks will curdle.

Put the mixture on a low heat and heat. Constantly stirring with a wooden spoon until the mixture slightly thickens. The cream should not be too thick in consistency. Ready cream to cool. Put in the refrigerator.

Chilled cream whip until soft crests are formed. The fatter the cream, the more saturated and oily will the taste of ice cream. It is advisable to take 30-35% fat, but not below 25%.

In a chilled cream, add whipped cream and mix. Put the resulting mixture in a plastic container. Cover and place in the freezer for about 1 hour.

Once the ice cream starts to solidify, whip it with a mixer. Thus, the ice crystals formed in the ice cream are broken, and it will acquire a more uniform and soft structure.

Put the ice cream in the freezer again for 1 hour. Then whisk again and put into the freezer for 2-3 hours.

Before you serve ice cream, transfer it from the freezer to the refrigerator for 20 minutes.
