black pepper freshly ground — ¼ tsp.
salt of sea — ¼ tsp.

For sauce
tomatoes canned in own juice — 300 g
red onion — 1 pc.
celery stems — 2 pcs.
lime — 1 pc.
garlic — 2 cloves
Thyme — 1 sprig
sugar brown — 1 tsp.
olive oil — 2 tbsp. l.
chili peppers — 1 pinch
freshly ground pepper mix — 1 pinch
salt sea — 1 pinch.


Preheat the oven to 180 ° C.
Peel the onion and garlic and chop the onions roughly.
Lime zest on a small grater.

In the bowl of the blender, combine the celery, onions and garlic, add the tomatoes together with 1-2 tbsp. spoons of juice, sugar, thyme leaves, lime zest, 1-2 tbsp. spoons of olive oil, chilli flakes, a mixture of pepper and salt, beat everything into a homogeneous mass.

Add Dorado and pepper on all sides, put in a heat-resistant ceramic mold, greased with olive oil and pour tomato sauce over it.
Bake fish in a preheated oven for 20-30 minutes, depending on the size of the fish.
