Guruli is a Georgian dish, which is a juicy, aromatic chicken stewed in wine with the addition of walnuts, onions and spices.


Chicken (any parts) — 0.5 kg
Onions — 1 pc.
Butter — 1 tbsp
Vegetable oil — 1 tbsp.
Walnuts — 30 g
Parsley — 3-4 branches
Dry white wine — 200 ml
Ground cinnamon — 0.5 tsp.
Ground ginger — 0.5 tsp.
Ground paprika — 0.25 tsp
Clove — 2-3 buds
Salt — 1 tsp (or to taste)

Step by step recipe

To make chicken guruli, prepare the products on the recipe list.

Wash the bird thoroughly under cold running water, then dry it with paper towels and cut into portions. In a frying pan, combine the butter with the vegetable oil and warm it well.

Put the chicken on a high heat and fry the pieces until golden brown, turning them from time to time.

In the meantime, peel a large head of onion and cut into half rings. Add it to the meat pan.

Stir and fry over moderate heat for about 5 minutes, until golden brown.

Finely chop walnuts (kernels) with a knife or use a food processor. Wash the parsley and chop finely. When the onions become soft, send nuts and greens to the pan.

Then add spices: salt, ground ginger, paprika, cinnamon and a couple of clove buds.

Mix the contents of the pan and cover with dry white wine.

Cover the cooking container with a lid and simmer the chicken on low heat for an hour.

That’s it, the Georgian dish “Guruli” is ready. The meat turns out to be juicy and very aromatic, and the wine in the process of long languishing turns into a thick sauce. Bon Appetit!
