4 pork steak
1 clove of garlic
2 tbsp. l. olive oil
1 h. L. lemon juice
ground black pepper
For green oil:

225 g butter
1 tbsp. l. olive oil
ground black pepper
1/2 Art. l. lemon juice
4 tbsp. l. chopped spicy aromatic herbs (parsley, coriander, thyme, basil)


Butter soften to room temperature and mash with a fork with 1 tbsp. l. olive oil and chopped herbs. Add lemon juice and season with salt and pepper. Put the mass on lined with cling film or parchment working surface and formed into sausage diameter of about 3 cm. Wrap in foil or parchment, put in the freezer for 1 h.

Pork wash under cold running water and pat dry with paper towel. Each steak lightly beat off. Garlic peel, pound and mix with olive oil and lemon juice, salt and pepper. Smeared with a mixture of steaks and fry in a pan for 5 minutes on each side.

Chilled butter with greens cut into circles. On each steak put on a mug of green oil and leave for 5 minutes. Good served with a vegetable garnish.

Tip! The butter you can not only add spice and aromatic herbs, and the grated zest of lime or lemon juice, crushed garlic, chopped nuts, crushed chilli or curry powder.
